The Eight Sides of Aluminum

How Alfonso Bialetti observed laundry boilers in 1930s Crusinallo and trapped steam inside an octagonal aluminum shell.

In the early 1930s, inside the industrial village of Crusinallo in Northern Italy, Alfonso Bialetti spent his afternoons watching women wash heavy linen garments in open metal tubs. The laundry apparatus of the era was known as the moretta: a central vertical pipe rising through a bucket of boiling soapy water. As heat built at the base, steam forced boiling water up the tube, where it sprayed over the clothes before draining back into the reservoir.

Bialetti ran an aluminum shell-casting workshop. He knew aluminum was light, conducted heat rapidly, and formed a stable oxide layer that protected the metal from rapid corrosion. Standing over his workbench in Piedmont, he realized the fluid mechanics of the laundry tub could solve a totally different problem: bringing concentrated espresso brewing out of commercial city cafes and into home kitchens.

CRUSINALLO, 1933

Before 1933, making espresso required massive nickel-plated brass boilers running under four atmospheres of pressure. Cafe machines were dangerous, heavy, and operated exclusively by trained baristas. Domestic coffee at home was limited to slow gravity drip pots or murky boiled grounds.

Bialetti designed a three-chambered geometric vessel cast from solid aluminum alloy. The bottom vessel held cold water. The middle funnel held ground coffee seeds. As the base rested on a gas flame, expanding steam built up pressure until water forced its way upward through the coffee puck, emerging through the central column into the top chamber as dark, rich espresso.

The decision to cast eight straight sides was not merely aesthetic; it provided grip for hands twisting the threaded aluminum base against a rubber gasket. The octagonal silhouette became an instant icon of 20th-century industrial design.

EVERYDAY WONDERS

Today, over nine out of ten Italian households own at least one Moka pot. More than 330 million units have been manufactured using Bialetti's original 1933 casting geometry.

We glance at the silver pot sitting on our stove top every morning without giving its physics a second thought. Yet resting on that burner is a compact pressure vessel—a piece of 1930s metallurgy that turned steam, aluminum, and laundromat physics into an everyday morning ritual.
